Few drinks have a history as full of chance and curiosity as coffee. It’s part of billions of people’s daily routine, but much of how it actually got to your cup — from discovery to the roasting process — is far less well known than the habit of drinking it.
1. Coffee’s discovery is credited to a goat herder
According to the most widespread legend, coffee was discovered in Ethiopia by a herder named Kaldi, who noticed his goats became energetic and couldn’t sleep after eating the red berries of a certain shrub. Curious, he tried the berries himself and felt the same stimulating effect. The story has no solid historical proof, but it’s widely told as coffee’s origin — and it’s not a coincidence that Ethiopia remains, to this day, one of the most important growing regions and a reference point for wild coffee genetic diversity.
2. Caffeine works by blocking tiredness, not creating energy
Throughout the day, a substance called adenosine builds up in the brain and binds to specific receptors, progressively signaling tiredness. Caffeine has a molecular structure similar enough to adenosine to occupy those same receptors without activating them — in effect, it “tricks” the brain, blocking the sensation of sleepiness rather than generating new energy. That’s why the effect wears off: over time, caffeine gets metabolized, the receptors free up again, and all the adenosine that built up during that window hits at once, which explains the sudden crash people feel once coffee’s effect wears off.
3. Decaf coffee still has caffeine
Contrary to what the name suggests, decaf coffee isn’t 100% caffeine-free — the decaffeination process removes the vast majority (generally above 97%), but not all of it. A cup of decaf can still contain a small amount of caffeine, enough to be noticeable for people with high sensitivity to the substance, even though it’s well below the amount in a regular cup.
4. Only two coffee species are commercially relevant
Of all the coffee varieties that exist in the world, practically all global commercial consumption is concentrated in two species: Coffea arabica (arabica) and Coffea canephora (robusta). Arabica is considered smoother and more aromatic, generally grown at higher altitudes, while robusta has a stronger, more bitter flavor and naturally more caffeine — which is why it’s common in instant coffee blends and bolder espresso. Genetically, arabica is actually the result of a natural cross between two other wild coffee species, which is part of why it’s more sensitive to climate and disease and typically costs more to farm than the hardier robusta plant.
5. Roast level shapes flavor as much as the bean itself
The same coffee bean can produce noticeably different-tasting drinks depending on the roast level. Light roasts preserve more of the bean’s original characteristics (acidity, fruity notes), while dark roasts develop more intense caramel and bitter flavors that mask some of the origin characteristics. Contrary to what many people assume, a darker roast doesn’t mean more caffeine — the extended roasting process actually reduces the bean’s caffeine content slightly.
Coffee has been banned more than once in history
Despite being one of the most widely consumed drinks in the world today, coffee has faced bans in different eras and places. In the 16th-century Ottoman Empire, rulers went as far as banning it, viewing it as a threat to social order since coffee houses became gathering spots where politics and ideas were openly discussed. In Europe, some religious and political leaders also tried to restrict coffee out of suspicion about its effects or rivalry with the trade of other drinks, like beer and wine. None of these bans lasted very long — the habit always came back, usually stronger than before, which suggests that banning coffee historically doesn’t work very well.
Bonus fact: coffee shaped entire economies, not just mornings
Coffee has been one of the most heavily traded agricultural commodities in the world for centuries, and its economic impact has gone far beyond the cup. In some coffee-producing countries during the 19th and early 20th centuries, coffee exports at times accounted for more than half of total national export revenue — shaping railway infrastructure, labor migration patterns, and government policy in ways that still show up in those countries’ economic history today. Brazil in particular has held the title of world’s largest coffee producer for well over a century straight, a run of dominance in a single agricultural commodity that no other country has come close to matching, and coffee cultivation there was directly tied to waves of European immigration recruited specifically to work the plantations.
